Cat5E
This is the newest version of CAT5 cables, formally called ANSI/TIA/EIA 568A-5 or simply Category 5e. CAT-5e is completely backward compatible with current Category-5 equipment. The enhanced electrical performance of CAT5e ensures that the cable will support applications that require additional bandwidth. For applications such as Gigabit Ethernet or analog video over CAT5E cables, you should certainly consider using CAT5e over CAT5 cable.
All aspects of performance are enhanced: capacitance, frequency, resistance, attenuation, impedance, and NEXT.

Cat6
Category 6 (ANSI/TIA/EIA-568-B.2-1) was ratified by the TIA/EIA in June 2002. CAT6 provides higher performance than CAT5e and features more stringent specifications for crosstalk and system noise. All CAT6 components are backward compatible with CAT5e, CAT5, and Category 3. If different category components are used with higher category components, then the channel will be limited to the performance of the lower category. Using all Category 6 components throughout the signal path should result in a Power-Sum Attenuation-to-Crosstalk Ratio (PS-ACR) that is greater than or equal to zero at 200 MHz.
